Do not mash potatoes in the food processor.This will make them very gummy and difficult to handle. |

Spiced Apricot and Lamb Tagine
60 ml olive oil
1 kg diced lamb
2 cloves garlic ,crushed
200g onion,chopped
1/4 tsp ground cinnamon
1/2 tsp ground cumin
1/2 tsp ground ginger
1/2 tsp ground tumeric
750 ml water
1 cinnamon stick
2 strips lemon rind
1 1/2 tbsp honey
150 g dried apricots
80 g blancched almonds ,toasted
1 tbsp sesame seeds,toasted
1.Heat oil in pan and cook lamb in batches until browned. Remove from the pan.
2.Add garlic,onion and ground spices to the same pan, cook ,stirring until the onion is soft.
3.Stir in the water,cinnamon stick and lemon rind.Ad the lamb and simmer covered for 1 1/2 hours or until lamb is tender.
4.Add honey,apricots and nuts to the lamb and simmer uncovered for 10 minutes.
5.Discard cinnamon stick and lemon rind.Serve sprinkled with the sesame seeds.
