I find it easiest to snip at herbs with a pair of scissors rather than chopping them in the usual way. |

Chicken Marengo
1kg.chicken thigh fillets
900 g chicken drumsticks
2 tbsp olive oil
250 g button mushrooms
250 flat mushrooms,sliced
300 g onions,sliced
2 cloves garlic, crushed
2 tbsp plain flour
125 ml chicken stock
125 ml dry white wine
1tbsp tomato paste
425 g tin tomatoes
1 tbsp fresh parsley, chopped
1.Skin the chicken pieces.heat oil and brown the chicken in batches.Drain on absorbant paper
2.Drain all but 1 tbsp oil from the pan, add all the mushrooms,onion and garlic ,cook stirring until the onions are soft.
3.Add flour stiriing quickly then quickly add stock,wine,paste and crushed tomatoes with their juice.
4.Stir overheat until the mixture comes to the boil and thickens.Add chicken.
5.Pour the mixture into a casserole dish and bake covered for about 1 hour,180C/Gas Mark 4 or until chicken is tender.
6.Serve this dish sprinkled with parsley.
