Berliner Doughnuts- Jam Doughnuts

31/2-4 cups plain flour
1/4 cup castor sugar
1 1/2 tsp salt
1 cup milk,warmed
2 egg yolks
75 gms butter,melted
7 g dried yeast
rind of 1 lemon , finely grated
Jam of choice,I use raspberry
extra castor sugar for dusting

1.Place flour,yeast ,sugar,, salt egg yolks and warmed milk in a large bowl.
2.Mix well then add the butter and lemon rind , mix again until a dough is formed.Now keep on kneading the dough for about 5 mins by mixer or 10 minutes by hand.This will give you a smooth and elastic dough.If it is too sticky carefully add a little flour at a timekneading in thoroughly.
3.Place the dough in a lightly oiled bowl,cover with plastic wrap or a damp cloth and place in a warm draught free place for 1 1/2 hours.
4.By this time the dough should have doubled in size.Remove from bowl and on a lightly floured surface quickly knead again for a few minutes ,this will knock the air out of the dough.
5.Divide the dough into 24 pieces .Take one piece,flatten on you palm and place 1/2 tsp jam in the middle.Pinch the edges together to form a sort of onion shape.Now gently roll between your hands to form a ball.Dough is elastic and pliable just make sure the thickness is even and there will be no breaks in it.
6.Place the doughnuts on a sheet of baking paper and cover with a cloth.Place this in a draught free place for 15 mins to rise.
7.Meanwhile heat up enough oil to deep fry the doughnuts ,about 4 mins on each side.Do not have the oil too hot or the doughnuts will be raw inside.Its best to try one first.
8.Fry the doughnuts 2 at a time pressing down with a spoon as they will bob about.
9.Drain on absorbent paper and while warm roll thoroughly in extra castor sugar.
