Coconut milk should never be boiled as it will curdle. It's usually best to add the coconut milk just before serving.

Nutty Chocolate Chip Cookies

250 g butter,softened
2 eggs
1 cup caster sugar
1 cup light brown sugar
3 cups plain flour
100 g flaked almonds
300g chocolate chips
1 cup smooth peanut butter
2 tsp vanilla essence
1 tsp salt
1 tsp baking powder

1.Pre heat the oven to 180C/Gas Mark4.
2.Line baking trays with baking paper.
3.Beat butter,peanut butter and sugars together.
4.Add eggs and essence , beat well.
5.Add the flour,salt and baking powder.Mix thoroughly.
6.Stir in the chocolate chips and the almonds.
7.Pick up golf ball size pieces of dough and roll into balls.Flatten slightly and place on baking tray.
8.Bake for about 10 minutesor until slightly brown on the edges slightly risen.
9.Remove from oven.Leave on tray for 5 minutes to cool down ,then place on wire rack to cool thoroughly.
These cookies will still be fairly soft when removed from the oven , they harden once cold.However they are a soft cookie not a crisp biscuit.Enjoy!!
