Coconut water can be found in the freezer section in Asian shops or in tins .The tinned variety is usually from the Phillipines.This is clear liquid that is very sweet , coconut milk cannot be substituted.

Traditional Peanut Butter Cookies

3 cups plain flour
1 tsp baking powder
1 tsp salt
1 cup butter
1 cup chunky peanut butter(creamy if preferred)
2 tsp vanilla essence
1 cup light brown
1 cup white sugar
2 large eggs

1.Pre heat oven to 180C/Gas mark4.Line 2 baking sheets with baking paper.
2.Beat butter ,peanut butter and vanilla together.Add the sugars and beat well.
3.Add the eggs ,beat again.Add the remaining ingredients and mix thoroughly.
4.Break off pieces of dough and roll into balls about golf ball size.
5.Place on the baking trays and with a fork gently flatten the cookies a little.
6.Place in the oven and bake for about 15 minutes or until cookies are dry on the top and golden brown on the bottom.
7.Remove from oven.Leave to cool on trays for 5 minutes before removing to cool completely on a wire rack.
8.When cold store in air tight containers.
